We would like to build a cable that has everything on it: 12VDC power, Ethernet, Serial, and USB. Since the power for the usb and the terminal are shared, we don't want to have to do anything funky to switch between using the 12VDC power supply and the 5VDC from the USB host. Will it work if we only connect the USB data lines and plug the power supply in?

This will power the terminal just fine, but the USB device will not enumerate unless 5VDC is applied to the power pin. Depending on which model you are using, you might consider just dropping the input voltage to 5VDC. The G58L (non-WiFi) and G58E units can be powered without problems using 5VDC. The G58B (battery-powered) model remains battery-powered when connected to 5VDC and will not charge at this voltage (long, sad story....)
